Apple Protein Muffins

I made these a few days ago and I absolutely love them. Thanks to One Clever Chef for this recipe!

Ingredients:
- 2 cups rolled oats
- 1 cup protein powder (vanilla is probably the best one to use, but you can use any).
- 2 apples
- 2 eggs
- 1 cup milk of choice (I used almond milk)
- 1 1/2 tbsp ground cinnamon
- 2 tbsp maple syrup
- 1 tsp baking powder

Directions:
1. Preheat oven to 350F.

2. Prepare a muffin pan with paper muffin tins or grease (ex. coconut oil, oil, butter).

3. Turn 1 cup of the rolled oats into a fine powder using a food processor (the blender I had wasn't washed so I had to pound the oats into a flour. That is an option if you don't have a food processor).

4. Process the apples in a food processor for 10-15 seconds. They should have the same texture as if they were shredded (again, I didn't have a food processor, so I just cut the apples into small pieces).

5. Mix all of the ingredients in a bowl.

6. Put the batter into the muffin pan.

7. Bake for 18-20 minutes or until golden brown and a toothpick in the center of one of muffins comes out clean.
