This is made to make him look more inevitable and accompany his intellectual personality, which communicates to the viewer that he does not move or act like a burly Viking. However, applying the aspects to real life, people this tall and sturdy are rare. Usually when a person grows unnaturally tall, their weight has a tendency to exceed the development of their bones and muscle, making their knees feel like glass.
We can assume that because of Viking genetics and his active lifestyle, Grimmel has developed a high bone density that went along his height growth. He needs this so his radius and ulna can support his hand—which of course, is larger than most. However, tall people are also prone to ligament tears. Longer limbs act as longer levers, so if the force he applies to his joints is too high, he can get injured if he's not careful. We will be discussing his joints later on.
I mostly headcanon that his hands are about 24 cm after analyzing scenes where I compare his hand to others. This gives him leverage for things like drawing his crossbow or tying a knot, which conserves his energy for more strenuous activity. Though, looking closely at the items he holds (such as this cup and flagon below), it's likely that it was animated to make it less awkward to hold. His personal equipment is likely customized for his size. Lastly, because Vikings are quite large and Hiccup is living in a house he used to share with his father—Stoick (6'9), it would make sense why objects like these would be held normally.
