Vegan Cinnamon Rolls

Cinnamon Rolls:

✨Avocado oil - 1/4 cup
✨Eggs - 2
✨Maple syrup - 1/2 cup
✨Vanilla extract - 1 tsp
✨Monk fruit/Swerve - 1/2 cup + 3 tbsp
✨Tapioca flour/starch - 3 tbsp
✨Almond flour - 2 cups
✨Baking soda - 1 tsp
✨Ground cinnamon - 2-4 tbsp

Icing:

✨Avocado oil - 2 tbsp
✨Powdered stevia/monk fruit - 1 1/2 cups
✨Cinnamon - 4 tbsp (if wanted)
✨Vanilla extract - 1 tsp
✨Almond milk - 3 tsp

-Preheat oven to 350 F (175 C)
-In a large bowl whisk oil, eggs, syrup, and vanilla
-In a separate bowl add all dry ingredients and mix
-Add wet ingredients to dry ingredients and mix until a ball is formed
-Stick ball in the fridge for ten minutes
-Put powdered stevia/extra flour on baking paper
-Stick dough ball onto baking paper and put more stevia/flour on top with another sheet of baking paper
-Roll out dough in a rectangular shape, about 1/4 inch thick
-Spread out extra stevia and cinnamon on the rolled out dough
-Carefully take the edge of the dough and roll it forward
(I used the baking paper to roll it up)
-Carefully stick rolled dough in the freezer for ten minutes
-Take dough out of the freezer and take off the baking paper
-Evenly cut the dough 1/2 inch apart
-Put cinnamon rolls (sideways) onto a baking sheet and bake for 20 minutes/golden on top

-Whisk together oil, vanilla, and almond milk in a large bowl
-Add stevia mix then add cinnamon
(The icing should be thin enough to spread over the rolls)

-Let cinnamon rolls cool for ten minutes then drip icing over the rolls
-Enjoy :)
