Sugar Free "Oreos"

The other night I was craving something sweet. I didn't want to make brownies or a mug cake so I decided to do something pretty different and step out of my comfort zone. I decided to make Oreos. When I made them, they didn't really taste like Oreos. The cookies of the first batch tasted like a cookie but not an Oreo cookie. And the filling was way too thin. The second batch was much better. I had my sister try them and she said that they tasted close to an Oreo. Which made me happy because, I haven't had an Oreo in like two years. So getting her approval was nice.
Anyway, I'll give the recipe.

Ingredients:

*Cookie
-Cassava flour (2 cups)
-Cocoa powder (1 cup)
-Coconut oil (8-9 tbsp)
-Egg (1) - room temp
-Stevia (1 cup)
-Powdered swerve (1/2 cup or 1 cup of Stevia)
-Salt (1/2 tsp)
-Vanilla (1 tsp)

*Filling
-Avocado oil (2 tbsp)
-Stevia (2-3 cups)
^-Almond milk (3/4 tsp)
^-Avocado oil (1 1/4 tsp)
(You can replace the almond milk and avocado oil with 2 tsp of heavy cream)

Instructions:

-Heat oven to 375 Fahrenheit/190 Celsius
-Melt coconut oil
-Combine coconut oil, egg, vanilla, and salt with a hand mixer
-In a separate bowl mix cassava flour, cocoa powder, stevia, and swerve
-Pour the wet ingredients into the dry and mix until combined
-If the dough is too dry, add a little almond milk to help it together
-Roll out dough into a rectangle and wrap in plastic wrap
-Chill it in the freezer for an hour

-Mix all ingredients with a hand mixer until completely combined
-If filling is too thin, add more stevia until thicker

-When dough has been chilled, roll it out to your desired thickness (usually it's better when it's on the thinner side)
-Use small, circular cookie cutter (I used the lid for a spice container) or a small, circular object that will cut out the cookies
-stick cookies on a sheet and in the oven for 7-10 minutes
-let cookies cool

-while the cookies cool take your filling and put it in a piping bag or sandwich bag
-when cookies are cooled put the filling onto one side of the cookie and top it with another
-repeat until all cookies are done


It is a really simple and delicious recipe. I stuck the cookies in the freezer after I was finished because my filling was a little runny but you can do it however you like. I'd recommend that you guys try this recipe.
