Blueberry Jam

Ingredients:

Blueberries - 2 cups
Water - 2 tbsp
Lemon - 1/2
Sugar free granular - 3/4 cup
Guar gum - 1-2 pinches
Vanilla extract - 1 tsp

Directions:

-Put all ingredients, except for the guar gum, in a pan, cover, and boil.
-Take cover off and stir on medium heat for fifteen minutes
-Smash blueberries while cooking
-Pour mixture into food processor/blender and pulse a few times (or until as smooth as wanted)
-Put the pinch of guar gum into mixture and pulse once or twice more
-Pour mixture into small mason jar and stick in the refrigerator
