A simple recipe that's delicious and healthy.
Crust Ingredients:
Almond Flour - 2 1/4 cup
Butter/Coconut oil - 1/4 cup (melted)
Vanilla - 1/2 tsp
Egg - 1
Sugar Replacement - 1/4 to 1/2 cup
Cocoa flour - 1/4 cup
Cheesecake:
Cream cheese - 16 oz (a little warmer than room temperature)
Eggs - 3
Sugar replacement - 1 1/4 cup
Vanilla - 1 tsp
Heavy cream - 3/4 cup (or 1 1/4 cup of Half and Half)
Tapioca/Cassava flour - 2-4 tbs
Sugar-free chocolate chips (dipped in flour or powdered sugar replacement) - 1/4 cup
Instructions:
-Heat oven to 350° F (about 175° C)
-Oil/butter the bottom of your cheesecake pan
-Mix all crust ingredients in a bowl until completely combined
-Spread mixture evenly on the bottom of your pan
-Bake for 10-15 minutes
-Place cream cheese into mixing bowl and beat until smooth
-Add eggs one at a time and mix between each egg
-Beat until fluffy
-Add the rest of the ingredients (except for the chocolate chips) into the mixture and beat until completely mixed and creamy
-Pour mixture onto the crust
-Add chocolate chips onto cheesecake
-Stick in oven for 40 minutes
-Turn off oven for 15 to 30 minutes and let cheesecake sit in the oven
-Take cheesecake out of the oven and let it cool completely before taking it out
*Personally I recommend sticking it in the refrigerator after letting it cool on the counter for 20 minutes, then cutting it.
