Irish Beef Bundles

Ingredients:

· 3 pound lean ground beef

· ½-1 whole Bell pepper

· 1 large (or 2 small) green onions sliced thinly (with stems) OR 2 TSP onion powder

· 1 can water chestnuts (chopped into fourths)

· 2-4 heaping TBS Hoisin Sauce

· 1-2 TSP Garlic Powder (to taste)

· 1 pinch fresh Parsley Flakes

· 10-15 large Romaine Lettuce Leaves (washed and drained)


Preparations:

· Wash onions, pepper, parsley, and romaine lettuce and drain

· Mince onions and place into small mixing bowl

· Slice peppers thinly, removing seeds and core, rise, and add to mixing bowl

· Drain water chestnuts and cut into fourths; add to mixing bowl

· Rinse and drain lettuce, set aside


Directions:

1) Add small amount of olive oil to Wok or pan

2) Use medium-high heat and add meat

3) Add sauces and seasonings and continue to cook until meat is brown

4) Strain grease out of the meat, set aside

5) Add pepper, onion, and water chestnuts to pan, sauté for a few minutes

6) Add meat back into pan

7) Add 1 TBS Soy sauce and 1 TBS Hoisin sauce (if stronger flavor is desired)

8) Cook until vegetables are tender

9) Scoop meat mixture into Romaine Lettuce leaf boat and eat like a taco

10) Serve with rice or noodle side dish

*This is another favorite of ours. I originally got the recipe as part of a middle-school Home Economics class and have still loved it all this time since.
(Thinking on it now, that WAS a really long time ago... and now I feel old. >.< )
