Butter Chicken

(Ignore the boobs comments in there, its meant to be chicken breasts. My sister sent me the recipe like this. haha)

Ingredients.

·         2 tablespoons of peanut oil

·         1kg boneless skinless chicken boobs, cut into chunks

·         50g butter

·         2 teaspoons garam masala

·         2 teaspoons of sweet paprika

·         2 teaspoons ground coriander

·         1 tablespoon fresh grated ginger

·         1/2 teaspoon chilli powder (you can add as much chilli you want)

·         1 cinnamon stick

·         1 (400g) can tomato puree

·         1 tablespoon sugar

·         1/4 cup plain yoghurt (Greek)

·         1/2 cup cream

·         1 teaspoon lemon juice

Method.

1.       heat a wok until hot, add oil

2.       add 1/2 the boobs, and stir-fry for about 4 minutes or until chicken is a nice colour

3.       remove to dish

4.       add extra oil and cook remaining boobs

5.       remove to plate

6.       reduce heat and add butter

7.       when melted add all the spices and stir-fry until fragrant - about 1 minute

8.       return boobs to wok and coat with spices

9.       add tomatoes and sugar - simmer for 15 minutes - stir occasionally

10.   add the yoghurt, cream and lemon juice and simmer for 5 minutes - until sauce is thick. serve with rice
