Breakfast Burritos
Ingredients
½ cup hash browns
1 cup hot water
1 egg per person
¼ teaspoon salt
2 T. Scallions (thinly sliced)
Dash of pepper
¼ cup shredded cheddar cheese
4 slices cooked bacon
1 tortilla per person
2 T. salsa Directions

 Gather ingredients and supplies
 Heat largest skillet on medium heat
 Heat water in microwave for 2 minutes. Soak hash browns in hot water for 3 minutes.
 Drain hash browns in a colander.
 Warm tortillas in microwave for 20 seconds between layers of paper towels.
 Add 1 tablespoon oil to skillet and heat skillet over mediumlow heat (#4).
 Beat eggs with fork in an 8 cup liquid measuring cup.
 Pour eggs into skillet.
 In a large mixing bowl stir the hash browns, cooked bacon, scallions, salt, pepper; set aside.
 When eggs have started to set up add hash brown mixture.
 Continue to cook until eggs are set. Add cheese.
 Spoon filling into the center of warm tortillas.
 Sprinkle with cheese. Drizzle with salsa, if desired.
