Baking is one area of cooking that can be very tricky. Even a slight change in measurements or temperatures can make or break a dish. Today, we continue our What The Veg series with this Eggless Red Velvet Cake.

Ingredients:

Dry Ingredients

1/2 cup all purpose flour
1 cup powdered sugar
1/4th cup unsweetened cocoa powder
1/2 teaspoon red velvet powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4th teaspoon salt
1/4th cup chopped walnuts (optional)

Wet Ingredients

1/4th cup oil
1/4th cup lukewarm water
1/4th cup milk
1 tablespoon vanilla essence
2 tablespoon yogurt
1 teaspoon vinegar


Procedure:
1. In a bowl mix the oil and and warm water. Make sure it's mixed well.
2. Next add the remaining of the wet ingredients. Mix well using an electric beater or whisker.
3. In a sieve add all the dry ingredients and sieve them directly into the bowl with the wet ingredients.
4. Using a spatula mix the wet and dry ingredients using cut and fold method. Do not over mix.
5. Pour the batter in a greased tin lined with butter paper.
6. In a pre heated oven of 160 degree Celsius bake for 25 minutes.7. Check with a skewer or knife to see if it's baked properly or not. If it comes out wet then bake for a few more minutes.8. Wait till the cake is cooled to unmold it.


Note:
1. You can decorate it with cream cheese or chocolate ganache.
