Ingredients.
*1 large onion.
*2tbsp finely chopped/grated fresh ginger.
*1 medium jalapeño or scotch bonnet.
*1-4tsp curry powder.
*3-4 cloves garlic, finely chopped.
*4 carrots; coarsely grated.*2-3 sweet peppers; thinly sliced.
*2 large tomatoes, chopped.
*1 can white beans.
*salt.
*Black pepper.
*2-3tbsp oil.
*1/2 cup finely chopped cilantro.
Preparation.
#-In a frying pan,heat the oil,add the onion and ginger and cook for about 5mins.
#-Add the jalapeno,curry powder, and cook for 1min.
#-Add the garlic and cook for 30secs.
#-Add the carrots and cook for 1min.
#-Add the sweet peppers and stir.
#-Add the tomatoes,salt,black pepper,and bring to a boil. Reduce heat to low,cover and cook for about 12-15mins.
#-Remove the lid,add the beans and cilantro. Cook for 5mins over medium heat.
#-serve.
