Raspberry Rose Coffee Cake

his Raspberry Rose Coffee Cake has such an amazing flavor combination! There are several elements for putting this coffee cake together, so it takes a little bit of time, but the unique and fun flavor is totally worth it! An unexpectedly awesome breakfast treat!

~Ingredients:

-Streusel:

1/4 Cup All Purpose Flour.

1/4 Cup Brown Sugar, packed.

1/2 Teaspoon Cinnamon.

2 Tablespoon Unsalted Butter, melted.

-Filling:

8 oz Cream Cheese, room temperature.

1/4 Cup Granulated Sugar.

1 Large Egg White.*

1/4 Teaspoon Rose Water.

1/2 Teaspoon Vanilla Extract.

1 Cup Raspberries, cut in half.

Pink Gel Icing Color.**

-Coffee Cake:

1 1/2 Cups All Purpose Flour.

2 Teaspoon Baking Powder.

1/4 Teaspoon Salt.

1/2 Cup Unsalted Butter, room temperature.

3/4 Cup Granulated Sugar.

6 Tablespoons Sour Cream.

5 Tablespoons Milk.

1 Large Egg.

1 Large Egg Yolk.

1 1/2 Teaspoons Vanilla Extract.

1 Cup Raspberries, cut in half.

-Glaze:

3/4 Cup Powdered Sugar.

1 - 2 Tablespoon(s) Milk.

1/2 Teaspoon Vanilla Extract.

1/8 Teaspoon Rose Water.

Pink Gel Icing Color.

~Directions:

Step 1: Preheat the oven to 350 Degrees Fahrenheit. Prepare a circular 9 inch cake pan with a circle of parchment paper in the bottom and grease the sides.

-Making the Streusel: 

Step 2: Add the all purpose flour, brown sugar, cinnamon and melted butter to a medium sized bowl and mix with a fork until well combined and crumbly. Set aside.

-Making the Cream Cheese Filling: 

Step 3: Beat the cream cheese and the sugar together with a mixer until smooth.

Step 4Add the egg white, rose water and vanilla extract and mix until well incorporated. 

Step 5Set aside the egg yolk for the cake batter. Set aside cream cheese mixture.

-Making the Coffee Cake: 

Step 6To make the cake batter, combine the flour, baking powder and salt in a bowl and set aside.

Step 7Add the butter and sugar and beat together until light in color and fluffy, about 3 - 4 minutes.

Step 8Add the sour cream and mix until well incorporated.

Step 9Add the milk and mix until well incorporated. The batter will be very thin.

Step 10Add egg, the egg yolk and vanilla extract and mix until smooth.

Step 11Add the dry ingredients and mix until well combined, but don't over mix. Batter will be thick and kind of sticky.

-Putting Everything Together: 

Step 12: Spread a little more than half of the cake batter evenly into the bottom of the cake pan.

Step 13Spread the cream cheese filling evenly over the cake batter, then arrange raspberries for the filling in an even layer over the cream cheese.

Step 14Drop small spoonfuls of remaining cake batter over the filling and spread into an even layer as best you can, then add the raspberries on top.

Step 15Sprinkle the streusel evenly over the top of the cake.

Step 16Bake the coffee cake for 45 - 50 minutes. It may still seem a little jiggly in the center when you remove it, which is because of the cheesecake. 

Step 17The cake should be a nice golden color on top.

Step 18Allow the cake to cool completely, then remove it from the cake pan.

-Making the Glaze: 

Step 19Combine the powdered sugar, 1 tablespoon milk, the vanilla extract, the rose water, and the pink gel icing color, in a small bowl and whisk until smooth.***

Step 20Drizzle over the cake. 

Step 21You can serve it warm or refrigerate it and serve it cool. 

Step 22If you refrigerate it before serving and want to eat it warm, you can microwave individual pieces for 10 - 15 seconds.

Step 23: Eat and Enjoy!

~Recipe Notes:

*Don't throw out the yolk as you will need it for the cake batter.

**You can use as little or as much pink food coloring you want. It depends on your taste and what kind of food coloring you are using (gel, powder, liquid etc...). If you don't have pink food coloring on hand, you can use red food coloring and just use a couple drops if using the gel icing.

***Start with 1 Tablespoon of milk and then if needed very gradually put in more. If the glaze runs too thin, then you can add more powdered sugar but remember that the more powdered sugar you add the more sweet the glaze will be.
