Potato Pancakes

Ingredients:
1 cup of mashed potatoes
1 egg
1/4 cup Parmesan cheese
Three tbsp flour
1 tbsp milk
1-2 tbsp chopped chives
Cheddar cheese
Sour cream
Directions:
1. Combine all the ingredients in a medium bowl except cheese and sour cream.
2. In a small pan, heat about 4-6 tbsp of vegetable oil
3. While that's happening, flour your station and dump the potato mixture there.
4. Flour your hands and shape in a circle, about 1/2 inch thick
5. Put the pancake on a plate. Carefully slide on the pan. Beware of hot oil.
6. Cool about 30 sec-1 minute on each side. Flip with a spatula. On a lined plate (with paper towels to catch grease), carefully place the cooked potato pancake on.
7. Remove to another plate. Top with sour cream and cheddar cheese.
Serves 1-2 people
