Akara (Bean Cake)

Also known as Bean cake or fried bean fritters, it's the sister of Moi Moi and the daughter of white beans, I love Akara, there's nothing more soothing than Akara and Pap on a cold and rainy day, it's the best thing, even though anything made from beans gives me heartburn, I can't stop eating Akara, that's how good it is, there are different recipes for making Akara but this is my favorite, it's known as Akara Osu

INGREDIENT

2 cups of white beans ( soaked and the bean coat peeled)
1 bell pepper
2 chilli pepper
1 medium sized Onion
Salt to taste
Palm oil (red oil) for frying

*you peel the bean coat by soaking it in water for a while and rubbing it till the skin pills off or by roughly blending it for about 30 seconds before rubbing it*, it should look like the picture below when you're done

METHOD

- After peeling the beans, allow it to soak for a few more minutes in order to soften it so you'll be able to blend it without adding water (using a food processor will be better but any blender works)

- DO NOT ADD WATER WHILE BLENDING IT, you want the bean paste to be smooth but not too smooth

- Blend the pepper in a blender without adding water, a rough blend should be OK but not too rough

- Heat the palm oil in your frying pan but be careful not to bleach it

- Using a hand mixer, whisk your bean paste till it is fluffy and has doubled in size (if you don't own a mixer, you can use an "omorogun", it's like a thick flat stick)

- Add half of the pepper paste ( add more if you want it spicier) to the bean paste and whisk it again till properly mixed (it should be peach in color)

- Make sure the oil is hot enough before adding salt to your bean paste, scoop your bean paste into the oil and fry immediately

- Fry as many batches as your bean paste can provide

Serve your Akara on its own, with yaji or pap (pap is made from corn starch, I think it'll be my next recipe)
