Ingredients;
. Cassava flour
. Small ripe bananas
. Chilli (optional)
. Vegetable cooking oil
Method
. Peel the small ripe bananas and place in a dish. NOTE; make sure your hands are clean because the bananas can tend to be sticky.
. Mash the bananas til they form a paste like mixture.
. Swift the cassava flour to get rid of small particles.
. Add the flour to the banana mixture and mix. The dough should be soft. You can add chilli to the mixture if desired.
. Place the dough on a clean flat surface and roll it until its flat.
. You can use a cookie cutter, a round plastic tumbler or a plastic cup to cut through the dough.
. Fry the cut dough until golden brown then place in a dish lined with absorbent paper. The absorbent paper helps drain the extra oil from the pancake.
. The pancakes can best be eaten when warm with chai tea.
