Irish Soda Bread

Ingredients

3 cups of all-purpose flour

1 tsp baking soda

1 tbsp of baking powder

1/2 cup of sugar

1 tsp of salt*

1 egg, lightly beaten

2 cups buttermilk

1/4 cup salted butter, melted*

* For the low sodium version simply leave out the salt and use unsalted butter.

Preparation

1. Preheat oven to 325 degrees F.

2. Combine flour, baking soda, baking powder, sugar, and salt in a mixing bowl.

3. In a separate bowl, blend together egg and buttermilk.

4. Add liquid mixture to dry mixture and mix just until moistened. Stir in melted butter.

5. Pour into well-greased pan.

6. Bake for 60-70 minutes or until an inserted toothpick comes out clean. Cool on wire rack and wrap in foil. Leave overnight for the best taste.
