I got the theory, (I use as a head canon) That sorbet was born as a female, Here's why:

• all of their voice actors are female:

• when I look at the shirt ends in kingdom, they have a lil move animation (when you tap on sorbet) Which kinda make it look like a skirt a bit. (I dunno if I just see it)
• it would be actually a little bit funny cuz in the old pirate times, women counted as bad luck bringer on pirate ships (I can't remember where I read that, but it doesn't matter now) and in kingdom, there's pointed out that sorbet has "to search for new ship again" It's also pointed out that every ship sorbet been on sinked.
