Question: Is it okay to open the story with dialogue in fanfiction, since the character's personality is already established to the reader?

Well, if you decide to break this rule, the dream at the beginning can't be just a hook. It has to be an important part of your story that also advances the plot in some way.

If you're including a dream in the beginning for certain plot reasons, at LEAST let the reader know (italicize it, or some clue like that) so they won't feel tricked/cheated into reading your book.
                              But yeah, best to avoid it entirely, I think

You're first chapter (or, more importantly) your first sentence MUST hook the reader. If they're not hooked, they won't want to continue reading. Humor, action, and other things make good hooks.

Well, it's good to establish your protagonist's 'normal', but that normal has to be destroyed within the first or second chapter in order for your story to truly begin.
