***EUROPEAN ANGELICA***

(Angelica Archangelica)

• Full Sun, Pot Suitable, Use as Tea, Culinary Uses, and Essential Oil.

Ideal Soil: Rich, cold, and moist.

Parts Used: All, except flowers.

Medicinal: Digestive problems, anorexia, rheumatism, and migraines.

Precaution: Not given to pregnant women or diabetics.

This sweet-scented herb resembles it's close relatives, parsley and cilantro [coriander]. It's leaf stems can be candlied and its roots infused to make a tea.

Angelica's name is derived from the medieval belief that it would ward off evil and cure all ills. Today, it's seeds are used to flavor drinks.

Leaves are cooked like spinach and eaten as a vegetable, while their stems are stewed to make jam.

GROWING GUIDELINES: 
When sewing, press lightly into soil surface and leave uncovered. Sow fresh summer seed as soon as it ripens.

Growth Habit: Biennial; height 5-8 feet [1.5-2.4m].

Flowers: Summer; tiny, honey-scented blossoms.

HARVESTING AND STORING:
Collect small stalks the first summer; harvest roots in fall. Pick stems and leaves in the second spring. Harvest ripe seeds before they fall; dry and store.

***CHERVIL***

(Anthriscus Cerefolium)

• Part shade, Pot Suitable, Used as Tea, Culinary Uses, and Essential Oil.

Ideal Soil: Moist and Well-drained.

Parts Used: Leaves.

Medicinal: Jaundice, eczema, conjunctivitis, and rheumatism.

Culinary: Potato, fish, and egg dishes.

Reputed to improve memory and aid depression, Chervil grows best and retains more flavor when temperatures are cool in summer.

Chervil has an aroma similar to aniseed and parsley combined, and is used in soups and salads.

Chervil is best used fresh. Minimize flavor lose by storing in glass jars and adding to recipes at the end.

Chervil has delicate, fern-like leaves and dainty flowers, and grows well below plants that offer some shade.

GROWING GUIDELINES: 
Sow fresh seed shallowly outdoors in early spring or undercover in fall. Keep seedlings moist. Transplants poorly.

Growth Habit: Annual; height 1-2 feet [30-60 cm].

Flowers: Summer; small, umbrella-like white clusters.

HARVESTING AND STORING:
Snip off leaves continuously as requested after 6-8 weeks of growth.
