Tip: If making for more than 2 people, simply multiply the ingredients.
1/4 cup almond meal
2 tablespoons Dutch cocoa powder
2 tablespoons honey
1 teaspoon canola oil
1/4 teaspoon vanilla extract
1 tablespoon reduced fat cream
1. Spray 2x 1/2 cup capacity microwave safe cups or mugs with cooking spray. Whisk egg in a bowl until lightly beaten.
2. Add almond meal, cocoa powder, honey, oil and vanilla. Stir with a fork until combined. Divide into two cups.
3. Microwave on high (100% powder) for 1 minute 40 seconds, or until cake is cooked when tested with a skewer. Cool for 1 minute before serving. Serve with a dust of cocoa or a drizzle of reduced fat cream and a few fresh berries, if desired.
