Sometimes, eating healthy isn't as difficult as shopping healthy.

But plants are a lot cooler than we give them credit for. Case in point, there are several varieties that can regenerate simply by hanging out in a bowl of water. So, this means that you can get more mileage out of veggies, save money, and avoid the grocery store temptation of-Oreos.

So how does it work? It's really as simple as it sounds. You just use your lettuce as you normally would, but reserve the stem instead of discarding it.

Throw the stem in a shallow bowl of water and add a few rocks to help stabilize it. Be sure to check it every 2-3 days to make sure there is enough water to cover the roots 

 (about 1/2 an inch)

Then, just watch your lettuce re-grow from the base like a leafy phoenix rising from the ashes. You'll probably see a few leaves by day 3 and you'll have a whole new head of lettuce within 2 weeks.

Plenty of other vegetables will also grow hydroponically including: bok choy, cabbage, carrot greens, celery, fennel, garlic chives, green onion, leeks, lemongrass and romaine lettuce. Just find them an appropriately sized bowl (tall or shallow depending on the size and shape of your veggie) and cover their roots in water.

So fill up some bowl and get growing. Make the veggie monster proud.
