SASKATOON BERRY PIE (CANADA)

ABOUT:

A yummy fruity pie. Saskatoon berries are known as serviceberries in the United States. This berry has often been compared with blueberries though it has more of an apple flavor.
Saskatoon berries grow abundantly in Manitoba.
Saskatoon berries if picked dry, will stay for a couple of days no problem on your counter. The most important thing is that you do not wash them until you are going to use them.

Recipe Cook Time: 65 Mins, preparation time: 15 mins.

INGREDIENTS:

1) 4 cups fresh serviceberries.

2) 1/4 cup water.

3) 2 tablespoons lemon juice.

4) 3/4 cup white sugar.

5) 3 tablespoons all-purpose flour.

6) 1 recipe pastry for a 9 inch double crust pie.

7) 1 tablespoon butter.

METHOD:

1) Preheat oven to 425 degrees F (220 degrees C).

2) In a large saucepan, simmer berries in 1/4 cup water for 10 minutes.

4) Combine sugar and flour together in a medium bowl, then stir into berry mixture.

5) Pour mixture into a pastry lined 6 inch pie pan

6) Brush little butter all over the pastry

7) Place second crust on top of pie; seal and turn edges and brush this crust with butter.

8) Bake in preheated oven for 15 minutes.

9) Then reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 to 45 minutes, or until golden brown.

SUGGESTION:

Crush the berries a little before boiling.

And make slit on the top crust.

Add 2 tbsp chilled, diced butter on top of the Saskatoons before placing the top crust.(optional).
